Strawberry Cream Cake

Ingredients

Cake
  • 1 ½ Cup Butter
  • 2 ½ Cup Sugar
  • 5 Eggs
  • 1 Teaspoon Vanilla
  • ¾ Teaspoon Almond Flavor
  • 3 Cups King Arthur Flour
  • ¾ Teaspoon Baking Powder
  • ¼ Teaspoon Salt
  • 1 Cup Milk
Filling
  • 2 Ounces Mascarpone Cheese
  • ½ Cup Sugar
  • 1 Teaspoon Vanilla
  • 1 Cup Milk
  • Gelatin
Ganache
  • 1 Cup Heavy Cream
  • 2 Cup Chocolate Chips

Recipe

Preheat oven 350° degrees and spray pans.  In mixer, cream butter and sugar until fluffy.  Add eggs one at a time, mix well and scrape edges.  Mix vanilla & almond flavor.  Mix flour with baking soda and salt.  Alternate flour and milk, starting with flour, pour into pans and bake 25 to 30 minutes.  Split in halves.

Cream mascarpone cheese and sugar until smooth.  Add vanilla and sprinkle gelatin over milk.  When dissolved add to cheese mixture then mix until small peeks appear.

Melt heavy cream & chocolate chips.  Dip strawberries for decoration. 

Take split cakes and add filling mixture to each layer.  Decorate with strawberries and enjoy!
