Oklahoma Egg Rolls

Ingredients

Egg Rolls
  • 1/2 Pound Oklahoma Ground Pork
  • 1 Cup Mushroom, chopped fresh
  • 1/2 Teaspoon Black Pepper
  • 1 Teaspoon Garlic, chopped
  • 1/2 Teaspoon Ginger, ground
  • 3 Tablespoons Soy Sauce
  • 1 Pound Egg Roll Skins
  • 1 Egg, beaten
  • 2 Cups Coleslaw Mix, cabbage & carrots
Sauce
  • 1 Cup Water
  • 1/2 Cup Sugar
  • 1/4 Cup Rice Vinegar
  • 1 Teaspoon Salt
  • 2 Tablespoons Cornstarch
  • 4 Tablespoons Water
  • 1 Tablespoon Red Food Coloring

Recipe

Egg Rolls

Brown pork in skillet, drain off fat.  Add Coleslaw mix, mushrooms, black pepper, garlic and ginger to skillet.  Stir-fry until tender.  Squeeze out any liquid from pan.  Stir in soy sauce.  Spoon 2 - 3 tablespoons mixture onto each wrapper.  Brush edges of wrappers with beaten egg.  Roll up wrappers as you would a burrito.  Fry egg rolls in 350° oil until brown.  Drain on brown paper bags. 

Frosting

Boil first amount of water then lower heat and add sugar, vinegar and salt.  Mix cornstarch, water and coloring.  Gradually add the hot mixture stirring constantly until thickened.

Yields 14 - 16.
